Create a new account configuration in your email software (client), with the same email address you have in your old-style POP based setup, except in this one you'll use IMAP instead.
Here's how you can do it depending on which Email Service (Gmail, Yahoo, etc) and Client (Outlook, iPhone Mail app, etc) you use.
Note that if you use a corporate server, or your own domain, the Email Hosting Service category to select below will probably be "Other".
